So I posted a photo of these beauties on my Instagram earlier and thought I would share the recipe!
I love brownies but have struggled for ages to find the perfect recipe to ensure they are indulgent and fudgey rather than dry and cakey!
As I mentioned in my Instagram post… I have been a little reluctant to put naughty treats up on my page as I’m trying to promote fitter4travel.
Although I don’t want to just limit myself to talking about fitness and travel all the time! Because the truth is… we all need our treats and cheats every now and again.
For me personally, I like to keep my diet relatively clean during the week but treat myself on the weekend!
Balance is key to a healthy lifestyle. Unfortunately I went through a time where I was hardly eating in an attempt to loose weight!
I am happy with my weight now. But most important I love food and I love working out. I balance these two things to suit my lifestyle and also my happiness! Find out what balance works for you and be happier!
But onto the recipe…
YOU WILL NEED
(FYI I don’t have scales so I have done it all in cups)
- 1/2 and 1/8 cup of unsalted butter
- 3/4 of cocoa powder
- 1 and 1/4 cups of granulated sugar
- Dash of vanilla extract
- 2 eggs
- 1/2 cup of self raising flour
METHOD TO THE MADNESS
In a fairly small bowl melt the butter in the microwave. (Hint- the bowl needs to be microwave safe😉)
Whilst that’s melting, pop the sugar and cocoa powder in a separate larger bowl. Give it a little mix together.
Grab the butter out the the microwave and pour it over your sugar/ cocoa mix!
Make sure its really well combined before adding the two eggs and vanilla extract.
From here add the flour. I like to add half at a time so it’s easier to fold in.
Pop the mix into any tin of your choice. I have a 9inch square tin which makes 16 brownies.
Now here’s for the tricky bit.. the temperature and time depends slightly on your oven!
Mine come out perfectly after 22 minutes on 180 degrees c in my oven. Although, I have made these at my parents house this way and they have come out dry!
Know your oven- mine is old and a little rubbish, so I know they will still be fudgey. If you have a super new and hot oven. Consider baking for a little less time!
And there you have it! The perfect fudgey brownies!
When you first get them out you might think there not cooked enough. But let them harden up and your on to a winner!
If you want to be extra naughty then you can do as I did and add chocolate ganache on top!
To make this I just heat up 100ml of double cream and add 200g of chocolate. Let it sit for a minute or 2 and then mix it all up!
